Baru pesto

Preparation
Place the baru nuts in a food processor and pulse until coarsely chopped. Wash the basil leaves removing the thicker stems and place in with the coarsely chopped nuts. Add 4 tablespoons of olive oil and pulse. Then add the grated cheese and 2 additional tablespoons of oil. Keep adding oil until the pesto is smooth but not liquid. Add salt to taste. Transfer to a bowl and put in the refrigerator until ready to use.
