The roots, and sometimes the young shoots, of purple salsify can be consumed as a vegetable. The roots taste vaguely of oysters, and when young, can be grated over salads. Older roots are best cooked and used in soups and stews. Shoots are eaten raw or cooked, and added to salad. Sprouted seeds can also be used in salads.
